Strive for a salad a day for great health! Make salad the main dish. A research paper showed that salads lowered cardiovascular disease risk and increased lifespan. Green and yellow vegetables and cruciferous vegetables (cabbage, broccoli, kale, collards, arugula, Brussels sprouts, cauliflower etc) lowered risk of cancer. I strive for a salad with green leafy veggies and include some cruciferous vegetables such as shredded cabbage, baby kale or arugula. Take home?
