Can you eat any type of non starchy vegetable to reach your weight loss goals? The answer is yes! What are non starchy vegetables? Non starchy vegetables are a powerful foundational food for health and weight loss. Non starchy veggies (NSV) such as leafy greens of all types, plus broccoli, cauliflower, carrots, cucumbers, cabbage, onions etc., can be eaten in unlimited quantities.
*However, there are 4 non starchy vegetables that are high in oxalates which should be minimized that include spinach, Swiss chard, beet greens and rhubarb. Oxalates bind calcium and limit it’s absorption and may increase the risk of developing calcium oxalate kidney stones. Only about 8% of woman and 13% of men ever get a kidney stone, but high oxalate diets may increase risk. Lacking adequate water can also contribute. Most other leafy greens like lettuces and kale are very low in oxalates and can be consumed in unlimited quantities.
Non starchy veggies (NSV) are very low in calories as they are about 70-100 calories for an entire pound of them and about 25 calories per cup, whereas starchy vegetables are about 100-150 calories per cup. Remember, if you eat about 5 lbs of food per day, and 1-2 lbs are NSV, then this will lower your overall caloric intake for weight loss helping to provide bulk and contribute to fullness with less calories overall.
Can you have any NSV you want? Absolutely! There is no limit to the type of non starchy veggies you can eat!
